This is a great recipe to get yourself packed with greens and vegetables, something that is extra needed during these months with flues flying all around the place. It also came to my notion right now that the recipe is also suitable for almost everyone since it’s vegan. And speaking of vegan – if you got yourself a Netflix account, you should really look at the documentary named Cowspiracy. It gets your thoughts about the environment and our food habits in a completely new light. I won’t go vegan 100 % after the documentary but I’ll probably shift to a main diet that’s vegan and then spice it up with some dairy products and some chicken or fish once in a while. I’m already very restrictive to red meat in my diet mainly because of healthy reasons, but this documentary gave me more arguments on why not to include it in my diet. Oh, enough talked about this subject, you better get yourself you own opinion on this matter, it’s really interesting anyhow and a conversation that’s really hot right now.

Jag uppmärksammade precis att receptet dessutom passar nästan alla då det är veganskt. Och på tal om veganskt – ni måste verkligen ta er tid att titta på en dokumentär som heter Cowspiracy om ni har möjlighet, den finns på Netflix. Dokumentären lägger verkligen ett nytt ljus på miljöfrågor och dess samverkan med våra matvanor. Jag ska absolut inte gå så långt som att säga att jag kommer att bli vegan till 100 % efter att ha sett dokumentären men däremot kommer jag att köra på vegansk kost som bas i fortsättningen. Jag är redan väldigt restriktiv med rött kött, främst på grund av dess hälsoeffekter, men nu kommer jag även att dra ner mer och mer på mjölkprodukter, kyckling och fisk på grund av alla argumenten som radades upp i dokumentären. Hur som, nog om mina åsikter, det är bättre ni själva ger dokumentären en chans och bildar er en egen uppfattning om ämnet. Ett intressant ämne som verkligen ligger i tiden just nu, väl värt att spendera en timme framför.

75 g spring onions
2 cloves of garlic
1 red chili
1 tsp grounded ginger
1 tbsp. Curry powder
1 tsp smoked paprika powder
Olive oil
1 cauliflower
1 can coconut milk
1 cup vegetable broth
Salt and pepper
150 g sweet peas
½ cup coconut flakes
Peal and chop the onion and garlic finely.
Split and chop the chili finely.
Heat a sauce pan with some olive oil.
Fry the onion, chili and spices for a minute.
Cut the cauliflower into smaller chunks.
Stir down the coconut milk into the sauce pan.
Add the broth and the cauliflower.
Let the stew simmer for about 10 minutes.
Taste and season with salt and pepper until you’re satisfies with the taste.
Chop the sweet peas roughly and add them to the stew.
Serve the stew with rice and sprinkle over some coconut flakes before serving.

75 g salladslök
2 vitlöksklyftor
1 röd chili
1 tsk malen ingefära
1 msk curry
1 tsk paprikapulver
Olivolja
1 blomkål
1 burk kokosmjölk
2 ½ dl grönsaksbuljong
Salt och peppar
150 g sockerärtor
1 dl kokoschips
Skala och finhacka lök och vitlök.
Dela chilin på hälften och finhacka.
Hetta upp en kastrull med lite olja.
Fräs löken tillsammans med chili och kryddor i någon minut.
Dela blomkålen till små buketter.
Tillsätt kokosmjölk och buljong till grytan.
Lägg ner blomkålen och låt grytan småkoka i ca 10 minuter.
Smaka av med salt och peppar.
Strimla sockerärtorna och lägg ner dem i grytan.
Servera grytan med ris och toppa med kokosflakes.
