Meatballs – Kötbullar

Something that’s pretty Swedish is meatballs. Most people may think about IKEA when reading “meatballs”, since the company has spread them around the world when they have expanded globally. But I would like to say that IKEAs meatballs aren’t so good, and it’s pretty embarrassing that people connect them to the Swedish food culture. So, this one is for you, who think that meatballs at IKEA is the way they should taste, that’s not true, this is how they should taste!

Svenska köttbullar, en lika bra klassiker varje gång. Det slår liksom aldrig fel och det är alltid lika gott. Alla har sina versioner och här har ni min.

Meatballs for about 8-10 portions – Köttbullar till ca 8-10 portioner
2 pounds minced beef meat (1 kg nötfärs)
1 pound minced pork meat (1/2 kg fläskfärs)
1 onion, or 2 if small (1 lök, eller två om de är små)
2 eggs (2 ägg)
1/5 cup bread crumbles (½ dl ströbröd)
2/5 cup cream (1 dl grädde)
2 tbsp salt (2 msk salt)
½ tbsp white pepper (½ msk vitpeppar)
½ tbsp black pepper (½ msk svartpeppar)
Butter for frying (smör till stekning)

Put bread crumbles, eggs and cream in a bowl and stir around. Let it swell for about 10 minutes. Go on with the onion. Chop it finely and fry it in some butter until soft and golden. Put all ingredients into the bowl with the bread crumbles mixture and squeeze the mixture with your hand until all ingredients are properly mixed together. Make small balls out of the meat mixture and fry them until done in a pan with butter. Serve with some good brown sauce and potatoes.
