Chicken with herbs

Since chicken is one of my favorite dishes, and the same is true for my love, it’s not odd that this meat often pops up on our plates. The thing that I love most about chicken is that it’s so easy to prepare, an attribute probably connected to the fact that I mostly prepare my chicken dishes in the oven. And this recipe is no exception.

Since our supermarket offered us a really good price on hole chicken this week, that’s what I went for. I decided to rub it with some nice herbs and fill it with some juicy lemon, to get all the flavors going, and I just need to tell you that the result was delicious! Juicy, tender, flavorful and gorgeous chicken with some nice complements like a cold sauce and root crops.

4 portions
1 chicken (en hel kyckling)
1 lemon
3 tbsp olive oil (3 msk olivolja)
2 tsp sea salt (2 tsk havssalt)
1 tsp pepper (1 tsk peppar)
1 tsp thyme (1 tsk timjan)
1 tsp rosemary (1 tsk rosmarin)
½ tsp pennyroyal (1/2 tsk mynta)
1 tsp oregano (1 tsk oregano)
2 cloves of crushed garlic (2 pressade vitlöksklyftor)

Potatoes, carrots, parsnip, onion (potatis, morötter, palsternacka och lök )
Olive oil

Start with the chicken, cut the lemon in half and rub the chicken with one half and cut the other one into smaller pieces and fill the chicken with it. Pour olive oil in a bowl and mix together with all the herbs and the garlic. Rub the chicken with the blend of herbs. I used dried herbs, but if you got fresh ones I would strongly recommend you to take that instead!

Börja med kycklingen. Dela citronen på hälften och använd den ena halvan för att gnida in kycklingen med. Dela den andra halvan i mindre bitar och fyll kycklingen med dem. Blanda samman olivolja med kryddor och vitlök i en skål och gnid sedan in kycklingen med blandningen. Du kan använda såväl färska som torkade kryddor, men har du färska så är det toppen att använda dem!

Now put the chicken on an oven tray and place it in the middle of the oven. Cook for about 30 minutes in 175 degrees Celsius.

Lägg kycklingen på en ugnsplåt och ställ in i ugnen i 30 minuter i 175 grader.

While the chicken is in the oven, start cutting your root crops and onion into smaller chunks. Blend them with olive oil, salt and pepper. When the chicken been in the oven for 30 minutes you add the root crops to the oven tray and then cook it all for another 30-40 minutes (or until the chicken is cooked) in the same temperature.

Medan kycklingen steks i ugnen så är det lagom att dela alla rotsaker och löken till mindre bitar. Blanda dem sedan med olivolja, salt och peppar. När de 30 minuterna har gått tillsätter du rotfrukterna på ugnsplåten och låter sedan allt tillagas i ytterligare 30-40 minuter, eller till dess att kycklingen är klar.

When the meal is ready, cut up the chicken into pieces and serve the dish with some nice yoghurt dip (I made mine of sour crème and the same mix of herbs and garlic that I used to rub the chicken).

Servera gärna kycklingen tillsammans med en yoghurtdip. Jag gjorde en bestående av gräddfil och samma örter (samt vitlök) som jag använde mig av till kycklingen.
