Yesterday I had this amazing lunch at home. Chicken with potatoes and tomatoes, all done in one oven tray, extremely simple! I love this kind of dishes, that doesn’t take you long to prepare or doesn’t involve to much of your precious time. And of course there is another nice thing about this one, it’s so good and flavorful, without a bunch of ingredients.
You really should try this one out since it’s a perfect meal to prepare when there are guests coming or you gonna serve a hole bunch of people!
For 6 portions
Potatoes, about 1-1,5 kg
750 g cherry tomatoes
One pot fresh oregano (en kruka)
2 tbsp white wine vinegar
4 tbsp olive oil
6 chicken thighs (kycklinglår)
3 cloves of garlic, sliced
Brown the chicken thighs in a pan with some olive oil. Season with salt and pepper. When the thighs are almost finished, add the garlic.
Cut potatoes, paprika and onions to chunks/cloves. Put them in an oven tray. Season with salt and pepper and drizzle white wine vinegar and olive oil on top. Put the browned chicken thighs over the potatoes and then add cherry tomatoes and shopped oregano.
Put the full tray in the oven for about 45 minutes, or until the chicken and potatoes are cooked, in 200 degrees Celsius.
If you like you may add a yoghurt dip and a green salad, but you don’t have to since there is a lot of vegetables in the tray and it will also become really juicy and nice.
