This dinner is quick and easy and it’s so tasteful that it’s derserves to go with a glas of wine if you ask me. With other words, it’s perfect comfort food, and perfect to prepare during weekends!

A good fajita dosen’t contain much. In my case I use some good minute stake, with a light seasoning (salt and pepper), tortilla breads, a nice salad, sour creme and my lovely homemade pineapple salsa.

The meat can be varied, and you may choose some vegetarian alternative as well, that’s entierly up to you guys. But the pineapple salsa, here there’s no choice, you really need to try this one out!

1 pineapple, chopped into small pieces
1 onion, chopped inte small pieces
1 red chili, chopped into small pieces

500 g crushed tomatoes (canned)
1 1/2 tbs red wine vinegar
2 tbs honey
1/2 dl chopped chives

Put pineapple, onion and chili into a pan and soften for about 5 minutes. Add all the other ingredients and just let it cook togheter for some minutes. That’s it! Easy and amazing, that’s for sure!
