Pulled pork

Pulled pork isn’t anything new to this world, but my version is. I don’t like the amount of sticky barbecue sauce tha every recipe contains, so I made my very own version to get the flavor and texture that I was looking for.

My mission caws to create a tasteful and juicy version, without the tons of sugar that you find in most barbecue sauces. The result is pretty fantastic, or absolutely amazing if you ask me. The meet is tender, juicy and just the way I wanted it to be like!

If you are going to make this wonderful version of pulled pork some day, you need to put some time of. Not because its time consuming, just because you need to rub in the spices the evening before you are going to cook it. This will help the flavors sunk in to the meet and the result will be so much better!

Here’s my version
2 kilos of pork
Spices to rub into the meet
Cayenne pepper
Black pepper

The reason why I don’t use salt in the rub is because it will cause the meet to retract and it may become ductile. But don’t you worry, the marinade or glaze if you like, contains salt, so the taste will be there at the end!

Use the same amount of every spice to cover the meet, then put the meet in the refrigerator and let it marinate over night.

The day after you put the meet in the oven, at about 125 degrees Celsius and cook it for at least 5 hours. The longer you let the meet stay in the oven the more tender it gets. But if you plan to let it cook for, lets say 7 hours, put down the temperature just a bit.

My “barbecue sauce”
When the meet got 2 hours left in the oven, I usually put on my barbecue sauce.

Blend together the following
1 dl of Chinese soya
1/2 dl of honey
2 cloves of pressed garlic
1/2 dl of olive oil
1-3 tbs of sambal oelek (depending on how hot you like it)
About 1/2 dl of BBQ seasoning (grillkrydda in swedish)

When the meet is ready, take it out of the oven and tear (pull) the pork into small pieces. Serve it with homemade pita breads and some fresh vegetables.

I promise you that this meal is worth it’s time! It’s absolutely amazing, and this 2kg pork will serve many people, so bring home some friends and through a pulled pork party!
